During the past two years an enthusiastic team of teachers and students have saved almost 40,000 kilos of food, which has been turned into delicious dishes and products. Yesterday, this team organised a ‘Food Rescue Market’ to make the new students aware of food waste and to introduce them to the way Hotelschool encounters this. Ten different ‘food rescue’ companies participated to the market, giving students the opportunity to taste dishes made of rescued food.

Special guests at this market were bucks, Mr Nelson and Jim. Male goats are usually slaughtered at a young age as they do not produce milk. The meat of the buck is often exported or thrown away as the demand for this type of meat is very low in The Netherlands. At the market Ron Blaauw showed that buck meat tastes great in his delicious rendang and satay dishes. Student Sasha: “This market tells you the story behind what you eat, and everyone loves a good story - ánd so does your stomach!”.

The tomato soup of Hotelschool The Hague, made from 4,000 kilos of saved tomatoes, also took a central position at the market. This soup is one of the products which was made within the project PATE, which stands for Practical And Theoretical Education. The aim of the project is to give students the opportunity to create change with a positive impact on the entire Hotelschool The Hague community and society as a whole. The UN Sustainable Development Goals (UN SDG) function as a framework for PATE, in order to achieve a better and more sustainable future for all. Hotelschool The Hague will participate to Veggie World coming weekend, where they will sell the concerning cans of fabulous tasting rescued soup. Veggie World is an international fair for vegan products and will take place on 9 and 10 March at the Jaarbeurs in Utrecht.
